Using a base of tangy Irish cheddar, she has experimented with a variety of flavors and has come up with some very popular combinations. We offer three types of Cahill's Farm Cheddar: Elderberry, Porter and Irish Whiskey. These semi-soft cheddars are made from pasteurized cow's milk and vegetable rennet. Varieties sold separately.

Ireland is having the gathering next year where the country is welcoming al those with Irish roots back home. Wouldn't it be great to visit cahills artisan cheese makers to see them make their cheese on their farm

Excellent Cheese!
I purchased 4 1/2 lb. packages of the Elderberry Wine Cheddar. This cheese is superb. The cold packing in a cooler was shipped and I received it in great shape and we've been enjoying the cheese. Great company to do business with. Buy with confidence.

A must to cheese lovers
Bought both the elderberry and the porter, excellent flavor and very smooth tasting, left no bitter after taste. Bought it for a Halloween party for the vein look. It was a hit.

this cheese has a really nice flavor, but it got lost if you had it after the stronger cheeses on our cheese plate. I would suggest it as the first chesse in a plate next time.

Lover of Cheese
Cahill's Farm Cheddar Irish Whiskey cheese is a very good cheese I'm a big cheese lover but haven't been able to find good cheese until now and there is much to choose from, the shipping cost I thought was to high but it came fast and fresh, great cheese
