This shelf-stable caviar comes from Iceland, where it is harvested from Capelin fish (Mallotus Villosus). These small fish come to maturity much faster than the ancient sturgeon who produce the famous Osetra caviars. This allows for a much more affordable caviar, which is then pasteurized and made shelf stable. This caviar is wonderful to use as a garnish, mixing into cream sauces, or enjoy with crème fraiche and blinis. An added bonus is its long shelf life allows it to be a pantry staple, ready whenever you need it or when inspiration strikes. Once opened, keep refrigerated and use within 5-7 days.

Yummy!
I'm not a caviar connoisseur but I found the black pearl caviar hard to put down. I really enjoyed it and it was worth the price.
