Based in Busche, a town in the Province of Belluno, Italy, Lattebusche is a cooperative that has been active in the dairy industry for more than 40 years. Busche is a pristine area rich in grazing land that has always been naturally devoted to cattle farming. Characterized by extremely cold weather with plenty of snowfall in winter and short, cool summers, the Province of Belluno is a typical alpine environment.

Made from a blend of goat and cow's milk, this cheese has a distinctive flavor. Sweet when young, it becomes more and more intense with age. It can be eaten on its own as a second course, cut into cubes to prepare salads, or used as a decoration for starters made with raw vegetables.

Great mix of cow & goat but too hard
Very good eating, top rating, but became too hard to cut & eat half way through, maybe I should towards the end have shaved it. But still a good tasting cheese.

The Anything Cheese
There is nothing this cheese doesn't go with. My husband uses it cold and grated as a topping for salads and on italian dishes. It also can be cooked in your food and can stand high heat. Tasty with a strong taste. We also grate it into powder and use in the place of parmesan. Makes great cheese sauces.

good cheese but not the same as carrabba's
If you're trying to match the caprino cheese found on the Chicken Bryan dish at Carrabba's, this is not it. While it is still very good cheese, it's not what you're searching desperately to find. I have looked everywhere for that cheese and the closest I can find is regular soft goat cheese at your everyday grocery store. This cheese is fairly firm and doesn't have the tangy bite of the caprino at Carrabba's. I'm going to let it age a little and see what happens (and again, it's perfectly good and tasty cheese) but it's not what I was expecting.

Fantastic
We made a tomato sauce with dry, red,italian wine (cannonau from sardinia). Grated caprino was placed on the top of the spagetti pasta and sauce. It was fabulous. Felt like I was in a restaurant. The taste is rich and smooth. I'm in love. I would recommend this to anyone.
