Nestled amongst the rolling hills and lush pastures of central Wisconsin, Carr Valley cheese remains one of Wisconsin's traditional cheese plants, famous for its cheddar varieties made the old-fashioned way. Owned and operated by the Cook family, Carr Valley will celebrate its 100th anniversary this year.

We had the good fortune of being placed next to the folks from Carr Valley at the annual wine festival in Kohler, WI. They were featuring their Cocoa Cardona, which we loved immediately. Made from 100% goat's milk, this cheese is aged and rubbed with cocoa, which enhances its flavor beautifully. This cheese is firm enough to slice, but also melts well. Cocoa Cardona won 1st Best of Class in the U.S. Cheese Contest in 2003. Thanks to this gem, we have since pursued some of their other wonderful cheeses.

Wonderful Cheese
This is a creamy light goat cheese with a subtle nutty flavor. It is good on a cheese plate, but I think it can be easily overpowered by other cheeses, if it is not the first cheese consumed. However if you pair it with a Cabernet, it transforms from being a good cheese to one that is absolutely delicious. It's probably because the Cabernet enhances the goat cheese, but also magnifies the cocoa taste really making this cheese shine. I highly recommend giving it a try.

Cocoa Add Rich Undertones
So mild my guests (who say they hate goat cheese) thought it was cow cheese. I love the flavor through and through, including the ingenious cocoa rub. You'd never guess that is the flavor enhancing this cheese so differently than others. I use unsweetened cocoa also as a base to my gourmet chili and no one has ever guessed that is what gives it the distinctive flavor. Cocoa is not just for candy! This cheese is firm enough to shred yet creamy enough to melt wonderfully.

One of my favorites!
I love this cheese. The cocoa rub can get a little messy, but once you start eating, it's difficult to stop. Easy to cut and disappears fast!

Not thrilled about the cocoa rub.
The cheese has a good flavor, but not too thrilled with the cocoa rub. Just to messy while cutting and also when served.

Totally creamy and good.
This cheese is better than you think it will be. It is fresh and creamy, but not bland. This is a great surprise for guests.

Strong Chevre Flavor; decorative cocoa
The cocoa is decorative since the strong goat cheese flavor overpowers it; will buy it again
