This county is the heart of horse country and a center for outdoor activity, including pony rides, treks on horseback, fishing, riding, and bird watching. The folks in Tipperary enjoy the good things in life, including their cheese. Cashel Blue is a young, somewhat mild and extra creamy cheese that, unlike inferior blues, is not too salty. It is a fabulous alternative to Gorgonzola or Stilton.

Creamiest Blue Cheese I've ever had
I recently purchased this for a soup recipe from Ashford Castle in Ireland. I tried the cheese by itself and it was amazing. The recipe was really good too. My boyfriend and I agreed that it was our favorite.

The best I ever tasted
I bought this cheese only because I had a coupon from Groupon. Talk about good luck! This is the best blue cheese I have ever tasted and I really have tasted a lot of them. Next time I will actually pay full price.
