Matured to perfection, Cave Aged Emmental is a special taste experience! Unlike traditional Emmental (also known as Swiss cheese), this one has a dark brown rind and a unique, nutty, full-flavored taste. It is manufactured by Emmi, master cheesemakers since 1782. Made in massive 200 pound wheels from pure, unpasteurized cow's milk, this special "Swiss" is aged for at least twelve months in sandstone caves deep below the Santenberg in the Canton of Lucerne. Using ancient techniques, a constant temperature and humidity can be achieved in the caves all year round, ensuring perfect development of every cheese Emmi produces.

Once you get past the initial stink, this is a superb-tasting cheese!!! Not only do I eat this straight, I used this to make an exquisite jalapeno-beer bread!!

One of my all time favorites
I was first introduced to this cheese from Harry's in Atlanta in the 90,s and have enjoyed it ever since. I like it very simple, just on crackers with a nice scotch.

Interesting
This is not your typical swiss...it has an interesting flavor, which could be due to the fact that it is cave aged. I like it, but doubt I would buy it again.

Emmental by Emmi
First time trying this cheese. My grandson's did not care for it as part of a wine & cheese tasting we did. I thought it was very good, but must say I do prefer a little more "bite" to my Swiss cheese. Nevertheless, it all 'disappeared' by the end of the tasting. I would buy this again to try in other recipes. I think it would work well in a quiche.

Another excellent product
Swiss cheese as it should be. Great taste. Try this with some liverwurst and onion. It holds its' own.

The Real Thing
The Cave Aged Emmental is, without doubt, the best Swiss cheese I have tasted since the '50's. I can highly recommend it.
