Pecorino is the generic name for Italian sheep's milk cheeses. This special pecorino comes dotted with red peperoncino flakes that give it a moderate spiciness that tickles the back of your throat without setting your mouth on fire. The peperoncino is an Italian red chili pepper that is shaped like a finger and about as hot as a jalapeno. Aged for over three months, the cheese has a firm texture that makes it a good candidate for slicing or grating. People who like spicy cheeses like PepperJack might find our Chili Pepper Pecorino to be a sophisticated alternative. It nicely blends the herbaceous flavor of sheep's milk with the spice of Italian chili peppers.

Delicious, but a little too dry.
I just came back from traveling in Italy. My favorite Italian cheese was Pecorino with red chili flakes. I've been searching for the same cheese, here, in the U.S. This cheese is the closest I've come to finding the cheese I loved in Italy. Even though this cheese had the red pepper flakes, it was too dry and crumbly. The cheese in Italy was creamy and smooth.

I would buy this product again
I find by letting this young cheese come to room temperature it will give the most texture and flavor..

Perfectly Piquant
Not too much heat. Possibilities for use are almost endless - cheese plate appetizer, on pizza, melted for pasta sauce (use spinach noodles for contrast), make a grilled cheese sandwich with this and french bread. Very tasty.

Love the heat and the pungent flavor
It wasnt too hot for me, I found the heat just right, this is a somewhat sharp & pungent cheese too, different from a Swiss. I grated it over homemade pizza with an assortment of other cheeses and it was great
