Looking Glass Creamery is a very small family farm and licensed cheesemaking facility located in Fairview, North Carolina. The business was started by Jennifer & Andy Perkins to produce exceptional, small batch, handmade cheese from goat and cows milk. The Perkins settled permanently in Western North Carolina in 2001 after falling in love with the area on their honeymoon hike of the Appalachian Trail in 1994.
Their hard, aged cow's milk cheese is called Chocolate Lab. It has a firm but not dry interior with a distinctively ridged rind that develops a dusty red color as it is washed in a brine solution over time. The final step of the process is to hand rub each wheel with crushed cocoa nibs from Black Mountain Chocolate blended with Blue Moon spring water. The name for the cheese comes from its friendly nature (with just a little bit of a bite) and its warm chocolate coating. It's hard not to love a Lab!
