After a long wait, we finally bring you chorizo cured in Spain. You will immediately notice the difference between this chorizo and domestic imitations. Palacios, a company based in Logroño, the capital of the La Rioja region, earned permission from the U.S. authorities to export chorizo to the U.S. in 1997, but it wasn't until 2001 that it started entering the country in any significant quantity. Palacios Chorizo does not contain any preservatives or artificial colors; just pork sausage cured with paprika and garlic. They use a traditional process, using a secret 30-year-old family recipe. Its meat and natural ingredients are carefully selected, creating a smoky, earthy, sweet and tangy sausage.

Finally, Americans can enjoy one of the true culinary treasures of Spain! Chorizo is excellent in stews, potages, omelets, paellas, or served as part of a tapas. It makes a statement, with a flavor so powerful that it does not influence a dish subtly. Available in regular or hot. Varieties sold separately.

The real thing!
I was raised in Spain part of my life in the Canary Islands and also in South of Spain (Jerez De Los Caballeros). Been looking for the authentic Chorizo for a llllllllloooooooooonng time! They always tell you "oh yeah yeah yeah ... it's real chorizo" and every time I have been disapointed. NOT THIS TIME!! This is the real thing guys. I am pleased BUT the product does leak quite a bit of liquid BUT I can live with it!!

Great tasting hot chorizo
I disagree with the reviews that said it was too dry.It is very good with the red onion cheese and wine or sometimes I eat half of a stick.

Something different
Well, this was a first for me, and it wasn't that bad at all. Had a nice taste and smell, even though its a dry sasuage. I had it in tomato sauce

Very Dry
Not sure this is the best chorizo unless you're looking for a very dry piece of meat. I buy it for my husband and this is not his favorite.

Terrific!
I love this chorizo! I've been slicing it thin and then layering it on a tortilla with cheese, some olive slices, and some salsa. After heating it in the microwave, I add some guacamole and a dab of sour cream. Makes a great lunch or dinner!
