This Christmas Bush honey comes from the Australian commonwealth of Tasmania. This pure, raw honey is incredibly thick, and sets up quickly after being extracted from the hive. This requires the processor to jar it immediately, leading to a small amount of pollen and wax particles remaining in the honey. Harvested from the Christmas Bush, this vibrant red shrub is also known as the Australian Blacktorn or the kurwan in local dialects. This honey is perfect for spooning over yogurt, goat cheese, or mixed into hot tea.
The Tasmanian Honey Company uses a cold temperature processing technique that avoids over-refinement and damage caused to honey by high temperature extraction and packaging, coupled with filtration that is the norm in most commercially available honey. As a result, Tasmanian Christmas Bush honey is a light colored, fine candied type with a "set" consistency.
