This unique Canadian cheese is born of the marriage of two great products – cheese and beer. The magnificent combination highlights the fruity aromas of a monastery-style cheese and the zesty flavor of craft ale. The rind is washed with St-Ambroise beer over six weeks, which lends Clos St. Ambroise a beige-to-copper color on the rind and a spunky aroma. The pale yellow interior has a soft and slightly supple texture. The nutty aroma and fruity/malty flavor is reminiscent of St-Ambroise beer, with a creamy, beefy finish.

The Fromagerie Fritz Kaiser cheese factory was founded in 1981 by Mr. Fritz Kaiser and is situated in Noyan close to the Quebec-American border. The dairy specializes in the production of firm, semi-soft, washed, mixed and bloomy rind cheeses. With a careful eye to tradition, Fritz Kaiser's cheeses are still produced by hand and carefully aged on wooden planks. In the past few years, the dairy has garnered several prestigious awards, including the Grand Prix des Fromages Canadians.

Pasteurized but stinky - very good
I scraped the rind off but left it on the end. Cheese inside is delicious, very good, I'd say interesting, not stinky. But the rind on the end leaves that wonderful aromatic "nose" while noshing. Gone quickly, enjoyed!
