This exotic reduction has the texture of jelly and the intense flavor and aroma of freshly brewed coffee. Made of 60% coffee, slowly reduced to preserve all the intense flavors and aroma. Sugar and pectin are then added, allowing this reduction to set to a gel. This reduction is perfect for adding to sauces, like you would a demi glace, especially for delicately flavored poultry, veal, or fish. You can also use it as an enlightening accompaniment on a cheese board, or blend it with cream cheese as a topping for bread.
Casa da Prisca are located in Trancoso, Portugal. A land endowed with a mountainous climate, Trascoso has hot, dry summers and harsh winters. This beautiful, dramatic landscape is the "Terra Fria" (cold zone) of the northern part of the Beirã region, spanning from Beira Transmontana and the adjacent municipalities of the Vale do Côa region.
