very poor
thi8s item was so full of fat and grissel that it was uneatable. There was no flavor. You should ask for your money back. I would like to get mine back.

Good product
The two game sausages are great. The 2 others don't have a special taste in my opinion.I suggest a french recipe : - cook the game sausages in a stove with onions, chestnut and prunes.- cook either mushed potatoes (add black pepper before mushing) or carrots (onions + milk + herbes de provence) in a pan.Cook both 20-25 minutes.Five minutes before it is done, add a little bit of the red wine you are going to drink during the meal, to the sausages.You can eat with a strong mustard (from Dijon) and a strong red wine (not sweet taste).

Mixed Bag
of the 4 varieties we liked 2 quite well, the one with figs was gritty from the fig seeds, and the 4th was too much like tripe, and very greasy for an entree. as an hors d'oeurve it might be ok. chopped up in eggs, would be fine, but it's too expensive for that, IMO.

Game sausage
I really enjoyed these sausages made in the lovely hamlet of Hayward, CA. I used them in a variety of dishes, but I especially liked the venison in a ragu with pappardelle.Also, they freeze very well. I'm thinking that I might want to use some on a pizza.
