Cotechino means the winter season has arrived to Italians. Also called Zampone, it is most often produced in the Emilia-Romagna region. This traditional sausage from Italy has just recently been approved to enter the U.S. market. It is a cooked pork sausage that gets its name from the Italian word cotiche, or the cooked prosciutto rinds, that are within the sausage. This wonderful product is a seasonal item that is most often enjoyed during holidays. Made here in the U.S. to exact Italian specifications.

Cotechino - great with a lentils soup
This is a gourmet food. Boil it as recommended and later grilled it to shade the excess of grease. Cut it in small cubes and put them inside a fresh made lentils soup. Your guests will love it all year long.

Does not taste like the original cotechino
Unfortunately it does not taste like an original cotechino made in Italy. I would suggest the makers to take a trip to Italy to taste it. I was so looking forward to this holiday treat...

You need to cook it.
I read the description and serving suggestions but not the "recipes" section. Didn't realize it is not dried, cured, and ready to eat. My mistake I suppose, so I won't fault it as it flavorful after a quick fry.

Just Like a Childhood Memory
This cotechino is exactly like those made by hand in my South Jersey home town in the 50's. Great seasoning and texture. Can be boiled or sliced and then baked. Delicious any way you cook it.

Italian Treat
This is my son-in-law's first Christmas away from home (Italia) so it's very special to be able to get a little "comfort food" for him. We received the package in 48 hours. We will enjoy the meat for our New Years Eve meal!
