Made the traditional way from hog jowls for a staple of authentic Italian cooking, and recently repopularized by chefs such as Mario Batali. The skinned meat is cured in sea salt for a month, removed from the salt, seasoned with black pepper, coriander, rosemary and bay leaf, then air-dried to complete the cure. Use rendered as an ingredient in sauces and sautes for a delicious unctuous quality, or slice thin and wrap around meat for grilling. Great Guanciale
This is only the second time I've had guanciale (once at a restaurant about 10 years ago and now as a result of my purchase) and it's delicious. It tastes best sliced very thin and served with pasta.

Arrived Quickly
I bought this as a gift, so cannot comment on its quality (although it looked great). However, the Igourmet service was excellent and the guanciale arrived seemingly the next day. I am very pleased with this experience.

Best Guanciale
I'm very happy with this purchase. I have been buying it in NYC - although we have Italian food markets, their guanciale is lacking in depth of flavor. Yours was the best I've ever tasted. And it's less expensive. I use it cubed, in tomato sauce and the flavor really came through. The shipping was prompt and well packed. I'll buy this again, but also will check your other products to see what I need.

Excellent Product
I ordered Cured Pork Guanciale after seeing it used on many TV cooking shows, knowing that I had the best chance to get a great product at igourmet.com. I'm so glad I did. I used a portion of this guanciale to make Leek and Potatoe Soup. The flavor was unbeatable! One does have to take time to render the fat but the time spent is well worth the results.

Convenient size, good quality
Guanciale is flavorful and of good quality. Best of all is the reasonable quantity - about 1 1/2 lbs. Diced all mine up and store 4 oz portions in zip locks . Perfect for when you want to make a sauce.

Melts in your mouth
I made a simple Carbonara variant with this product and the cubes fried up crispy on the outside and melt in your mouth tender on the inside. Heavenly. This is definitely a "wow the crowd" ingredient.I should note that my two packages were well over the baseline weight for the product, so I essentially received an extra pound for free. Thanks iGourmet!
