Tilsit is a surface ripened cheese first made by Dutch settlers in East Prussia, near the town of Tilsit, in the mid-19th Century. They were trying to recreate their beloved Gouda, but the cheese became infected with moulds, yeasts, and bacteria in a damp cellar and so, Tilsit was born. Also known as Tilsit Havarti, this cheese has a fuller and more intense flavor than Havarti, but is milder than German Tilsit. Made of partially skimmed milk with a brownish-orange washed rind, Danish Tilsit is more yellow in color than Havarti but has a similar springy, elastic, semi-firm texture, ideal for slicing. Danish Tilsit also has a piquant flavor, making it a great table cheese to enjoy with a Danish beer. Try this versatile cheese cubed in salads, melted in sauces, on potatoes, flans, or on burgers.

Way too stinky for my crowd
I expected something closer to a standard cream Havarti. When I opened it I was over come with the strong ripe cheese smell. It was used at hospitality for a large retreat. The first two nights all the other cheese was consumed but this. I threw the last lb away.

Dansit Tilsit is a beautiful cheese with a wonderful taste and texture. This was a good example and was delivered in perfect condition. It is my favorite cheese!

Danish Tilsit
Though I knew it was not German Tilsit (which was unavailable) I was disappointed in the fact that it was so mild, more like Havarti. I guess I should have known better than to settle for Danish.

iGourmet does not know how to wrap cheese.
The tilsit was shrink wrapped with so much vacuum that the holes in the cheese were no longer existent. The flavor and texture was destroyed. I ended up throwing it away. iGourmet was unresponsive to my request and suggestions to have the cheese wrapped in paper.

This is the cheese I've been looking for!
Exactly the cheese I hoped it would be. It's hard to find. The only complaint I have is that one piece was an end. Once it was trimmed, there was about 15% less cheese than I paid for and the taste was a bit bitter.
