Dirt Lover is a sheep's milk chees styled after classic ash-dusted French farmhouse cheeses like Selles-sur-Cher and Valencay. It has an edible white bloomy rind that reveals an underlying layer of vegetable ash. When cut, it shows a lovely black border created by the ash just under the white rind. This ring, and the love of the soil, is the inspiration behind the name. In spring, Dirt Lover is firm and dense with a nuttiness balanced by the savory notes of the ash. In summer, it is firm when young and develops a creamy ring just under the ash which expands as the cheese ages. As it ages, flavors deepen and become earthy and buttery with a hint of citrusy tang. It is aged for at least two weeks and reaches its peak at six to eight weeks.
Green Dirt Farm is a women owned-and-operated small farm dedicated to bringing the best 100% grass-fed lamb and farmstead sheep's milk cheeses to their community. The farm is set in the bluffs above the Missouri River Valley about 40 miles northwest of Kansas City, Missouri.
Green Dirt Farm sheep's milk cheeses are made using milk from their own grass-fed, gently-raised ewes. Sarah and Jacqueline handcraft the cheeses on their farm using traditional old world methods that produce a unique richness and depth of flavor. The diverse grasses of the pastures flavor their ewe's milk with hints of clover, legumes and flowers. The flavors in the milk change as the pastures grow, creating cheeses that uniquely reflect Green Dirt Farm and celebrate the seasons.
