Rillettes is a combination of shredded meat and duck fat, seasoned and cooked confit-style. Originally this dish was made of pork and a staple of many poor family's diets. They would roast either a fatty pork belly or put a tough pork shoulder in a pot with some cubed backfat. As the meat slowly cooked, the fat would render out into the pot. After eight or ten hours of cooking, the meat would be fall-off the bone tender and infused with the flavorful fat. This intense cooking period helped to preserve the meat, making rillettes an important dish in the time before refrigeration.

Made of duck, pork, and duck fat.

Rillette d'Antan!!
Hard to find in the USA, fulled of flavors, right consistency easy to spread on a piece of bread. Same quality that the rillette that you purchase in France, thanks.

Really French
Very close to the French taste, compared to the different pts and saucissons from igourmet... I William border Alain, with the raclette cheese...

Love it
Some of the reviews made me laugh...."lightened it a bit with mayonnaise"! Make no mistake, if you are not a pate fan stand clear of this fiendishly gourmet delight.

Excellent duck rillettes
Gift for my father for Christmas, who is from Le Mans, rillettes capital of the world. The duck is almost as good as the pork, in his opinion. Arrived the day it was supposed to in its insulated packaging. Great purchase.

Just Ducky!
A rich velvety texture and taste that goes superbly with a clean, crisp Sauvigon Blanc. Good with french bread, toast or crackers. Great blend of duck & pork.
