We say it is grand because a whole wheel of Gruyere weighs about 80 pounds. In fact, it takes over 100 gallons of milk to make a single wheel of Gruyere! Special cheese . but high in cost
I love Gruyere. I lived in Geneva with Fondue for 4 years. I love the cheese but find its stateside cost is too high. A One time only Occasion. JUst too steep.

Great for Quiche
I use this cheese in Quiche and it works better than anything else..If you cube it it gets soft and gooey without totally melting and disappearing into the egg and onion mixture...Im assuming you let your Quiche rest after baking and eat it when its just warm...If you cut it too hot it will not be "set."

Gruyere Pound cut
This is So flavorful, and so awesome I can't buy enough. I only wish I could buy a 5lb cut. I put it in everything from eggs to mac and cheese, to eating it on crackers. You will love it!
