Our Green Waxed Cheddar is produced by Tuxford and Tebbutt from pure Irish milk. The milk for this "bitey" cheddar is taken from cows grazing the green grass of southeast Ireland, an area traditionally known as "The Garden of Ireland". Here, the winds blow in from the Atlantic, depositing rain throughout the year, providing the perfect growing conditions for lush grazing. This environment produces rich, creamy milk that is perfect for cheese making. Our Irish Green Wax Cheddar is aged for a minimum of 12 months, but may be aged longer as it is only when that distinctive strong Irish cheddar flavor is ready that Tuxford and Tebbutt's master grader will deem the cheese ready for sale. The cheddar is then cut into blocks and covered in green wax, giving the cheese a distinctive Irish appearance.

So Good, I Ordered 5 pounds!
A few weeks ago, for St. Patrick's Day, I ordered the 8 ounce size of this cheese and took it to a party along with other cheeses from IGourmet. It disappeared so quickly I could not believe it. So I ordered two more 8 ounce sizes and the 5 pounds for all recipes that needed cheddar, some recipes that did not, and just for snacking. That was a good decision. We love it.

This is the BEST CHEESE
I ordered this as a special treat for a St. Patrick's Day gathering of Irish family members and I should have ordered more. Everyone loved it and kept asking for more. A great buy.

This is the most awesome cheese!
Yes, I did buy 4 pounds of this cheese. It is the most awesome cheese I've ever eaten. Maybe next time I'll have to buy 5 pounds. I could eat this all day and never get tired of it. Try It You'll Like It!

Wonder Irish cheese I Can't Stop Eating!!!
I had this cheese at a 5 star restaurant in Phoenix. Aged cheeses give me migraines and I haven't had an aged cheese in many many years BUT this cheese doesn't give me migraines and I've ordered and eated over 3 pounds of this myself. I now buy 2 pounds at a time but will more than likely by 3 pounds at a time.

Never had this before, but...
I've had other Irish cheddars before that were wonderful. This one is above and beyond! I loved its sharp flavor and somewhat creamy texture.
