Although our smooth, mild Kashkaval comes from Bulgaria, it is typically from the Balkans and is also produced in Romania, Hungary, Turkey, Greece, Slovenia, and Croatia. Kashkaval is aged for six months, during which time it develops a slightly tangy flavor with a perceptible hint of olive oil. Needless to say, this sheep's milk specialty is almost always served with olives and is a traditional component to the Balkan diet. One of Kashkaval's unique properties is that it does not melt, making it suitable for grilling. Simply cut some 1/2 inch thick slices of Kashkaval and sauté in olive oil and crushed garlic until lightly browned on both sides.

Very good! But don't bother trying to fry it...as it melts all over the pan. My family liked it sliced up on crackers (Rosemary, olive oil Triskets). I've ordered this before and will do so again.

Have re-ordered this and will again
I have a preference for tangy cheeses and like cheese that melt or grill. This reminds me of a cheese we used to get in Germany when I was a child, I just remember my mother calling it "Rat Cheese" (I am not sure why) but we used it for everything. Great for Apps., Salad sides and will give a Mac'n'Cheese a very adult twist.

I'm a fan!
I served it as appetizer on a platter with other cheeses, my special recipe meat balls (bite size, appetizer style), cold cuts, Kalamata olives and Roma tomatoes. It is quick (for unexpected guests!) and everyone loved it!

Caramel flavor; a bit grainy & salty
Probably good melted in olive oil and when one has a hankering for salt; much more pungent and grainy than mozarella (disagree with prior reviewer); not entirely sure if I'll buy this again though

nice cheese
Very nice cheese. Kashkaval is one of my favorite cheeses. I like a little more flavor, and a slightly different texture. But will order again.
