This is the premier olive oil produced by the Cooperativa de Viver in Valencia, as it is made only from the first cold pressing of olives taken on their first harvest day. Each bottle has its lot number written by hand on the back, a sign of the extremely small-scale production and care this oil receives. The cooperative was founded in 1990 to bring together small mills and olive growers to produce an extra virgin olive oil of the highest quality, as well as help the community support a centuries-old trade of olive and olive oil production. Currently the Cooperative has about 450 members in the region of Alto Palencia (Castellón) territory. This bright oil has an intense flavor and rich, buttery body. We love this oil splashed over fresh seafood, grilled vegetables, or gently drizzled over salads, white beans, or fresh bread.
