When life gives you too much milk, make cheese. This was the problem faced by Canadian cheese maker Fritz Kaiser several years ago. He had more goat's milk than he needed for making his fresh goat cheese. So he decided to try to make a firmer goat cheese with some aging potential. Tomme du Haut Richelieu is the delicious result. The cheese has a washed rind, supple body and a hay-like aroma. It has a nutty, yet milky flavor in the paste, with a sharp, flinty-tasting rind. Its aroma is reminiscent of fresh mushrooms and its nutty flavor intensifies considerably with age.
The Fromagerie Fritz Kaiser cheese factory was founded in 1981 by Mr. Fritz Kaiser and is situated in Noyan close to the Quebec-American border. The dairy specializes in the production of firm, semi-soft, washed, mixed and bloomy rind cheeses. With a careful eye to tradition, Fritz Kaiser's cheeses are still produced by hand and carefully aged on wooden planks. In the past few years, the dairy has garnered several prestigious awards, including the Grand Prix des Fromages Canadians.
