Named after a village in Normandy, Livarot is a very strong-smelling cheese. For those of us who can withstand the smell however, it is one of the world's great eating cheeses with a smooth, ripe, slightly spicy flavor. Its rind is encircled with straps of paper that prevent the cheese from collapsing during maturing. The straps are reminiscent of a colonel's stripes, giving the cheese its nickname "The Colonel". A young, soft cheese that becomes runny at room temperature, Livarot is a true gourmet item in the French tradition.

It's the real thing!
Definitely an acquired taste, but, once you've acquired it, it's wonderful! Goes great with coarse crackers (or just toast) and wines (not necessarily French :))How much of the rind to eat (if any)? Again, a matter of taste. I like to peel off the side, but eat the top and bottom.My brother's advice: Don't eat the paper stripes on the side! :)

One of my favorites
This is one of my three favorite cheeses, and I am delighted to be able to get it here in the US. It was a bit young when it arrived but matured well.

Yummmm!
This creamy, delicious cheese is so potent that you'll have to wash your hands AFTER eating it! It's wise to let folks nearby know that you're about to open this cheese, and after opening it (at room temperature) it may take serious coaxing to get them to try it. This is a cheese our dog prefers to roll in than eat, and she'll gingerly steal the wrapper from the trash and hide it for "later". Note: The rind, with its beautiful hand-washed bloom, really is inedible and must be trimmed from the cheese. We ignored this fact, ate some of it, and were sorry for it later.

Is not as good as the description
This cheese has an excellent description on the website and the cheese is exquisite elsewhere. This product was not runny and had a very bland taste. No matter how long it was kept at room temperature, it never became soft. Even the aroma was rather poor. Very disappointing all round. Coulommiers or Epoisses from this website are much better.

Dreamy and rich
I would travel to France to get this cheese but I am happy and lucky that [...] can provide it for me. The best of the stinky cheeses by far!
