Once again, Anna Van Dijk has created a startlingly different goat's milk cheese. The base of this new cheese is a younger version of one of our favorites, Van Dijk; a tangy aged goat cheese. Made from the milk from her herd of 500 goats in Eindhoven, Holland, Anna has added a unique ingredient-- marigold to this great cheese. Like Cornelia, Anna has achieved the perfect balance of flavors in her new concoction, Marygold.

Marigold, also known as calendula or pot marigold, was a popular ingredient throughout medieval and renaissance Europe. In Holland, according to Gerard's "Herbal", "no broths are made well without dried marigolds." Marigold gives color and a piquant touch to cheese, soups and stews. In fact, the petals were used to color cheese until annatto was introduced from America. The presence of marigold not only gives a slightly floral hint that complements the flavor of the cheese, but also creates a distinctive presentation with the creamy white color of the cheese sprinkled with orange and yellow flecks of petals. A must-try for any lover of Dorothea or Van Dijk.

Favorite Cheese
When I learned that I was allergic to cows milk, the one thing I missed most was the Van Dijk gouda. This cheese is so good that I now don't miss cows milk cheese at all. The best goat cheese I've tasted, it has wonderful crunchy bits in it along with a rich gouda like flavor and sweetness that I love.

Pleasant Surprise
We first received this cheese in place of our order of Dorothea which was out of stock. What a pleasant surprise! It is similar to Dorothea and is actually made by the same Dutch farm. But where Dorothea is creamier and a bit saltier, the Marygold has a distinctive taste--but not at all bold--difference from the Dorothea provided by the inclusion of the marigold petals that is a bit hard to classify but is nonetheless satisfying. I quickly became quite fond of this shipping "mistake" and I found it to pair particularly well with B&B on ice--the perfect remedy to a long and stressful day!

a new favorite
as a huge fan of dorothea I was eager to try this, and boy it didn't disappoint. Lovely texture and delicate floral notes complementing the goat. fabulous!

Okay, but nothing I'd order again
We got this as a replacement cheese. It was kind of a hard goat cheese. The flowers are a weird texture and don't add much taste, but it's just enough that you can taste it, and that is the problem. It just wasn't tasty and the flavor did not stand out on crackers. Worst, something we didn't think about, one of us ended up being allergic to the marygold (not fun!) and ended up at the doctor.

how a substitute became a faorite
this cheese was a substitute for one ordered-when 1st tasted, it was pleasent and at room temperture it was nutty and mild-it relly goes well grated on green vegtables

A most interesting cheese
I didn't know what to expect when I tried this cheese but I must say I was pleasantly surprised; it is better to let warm to nearly room temp to fully appreciate this cheese. I love it with simple water crackers so it is not overpowered with other tastes. It is lovely with eggs, great on its own or as a before or after dinner treat. I could eat this straight with no problem at all.
