FireFly Farms of Bittinger, Maryland is located about two hours south of Pittsburgh on the Allegheny Plateau. The 130-acre farm, home to more than 220 goats, is run by Mike Koch and Pablo Solanet, two young professionals who are part of the trend toward artisan cheese making that is taking the United States by storm. Merry Goat Round is Firefly's playful approach to a goat's milk Brie. While it resembles a mini-Brie from the outside, its texture is slightly firmer and its taste has a sharpness not found in Brie or Camembert. Aged five to eight weeks, it is a delightful addition to any meal and melts beautifully.
