All of Elspeth Biltoft's preserves are made in a traditional way in her converted 19th Century stone barn at Rosebud Farm in North Yorkshire, England. Whenever possible, she uses organic products. She always uses unrefined sugar and fresh lemon juice and no pectin. Her entirely female staff chopss, cook, and labels in small batches - no more than 120 jars at a time to maintain the highest quality of flavor. The result of these measures are some of the best handmade jellies we have ever tried. They are high in fruit, low in sugar, and full of all natural flavor.
