Olivar de la Luna organic extra virgin olive oil is made 100% from the Nevadillo Blanco olives that are indigenous to Sierra de Cordoba in the northern regions of Andalucia, Spain. Through the production of this high quality organic olive oil, Olivar de la Luna is able to protect their local environment and agricultural traditions. This small family farm has been organically cultivated since it was established in the 18th century. Olivar de la Luna focuses on energy efficiency, biodiversity, and the recycling of all wastes, such as using the by-products as natural fertilizer. The trees are cultivated without irrigation, much the harvest is done by hand, the majority of the electricity comes from solar power, and even the grass is mowed organically by sheep grazing between the threes. Often used as a finishing oil, it's great on salads, soups or poured over a thick hearty bread. With a 0.2% acidity level, this oil is wonderful with grilled vegetables, fish, or pork cutlets.
In 2013, Culinary Collective has begun donating all gross profits from the sale of Olivar de la Luna organic extra virgin olive oil in support of the Olivar de la Luna farm. The economic situation in Spain has put the Olivar farm at risk. Culinary Collective hopes that their efforts in the US market will help avoid the loss of this farm and all that it embodies. This product has been produced free of gluten, nuts, dairy, soy, and genetically engineered ingredients
