Lifeline Farm in Victor, Montana, is a Biodynamic farm. Biodynamics is a science of life forces, recognizing the basic principles at work in nature, and an approach to agriculture which takes these principles into account to bring about balance and healing. In a nutshell, it takes organic farming one step further by actively working to "heal the Earth" through the act of farming. Led by Ernie Harvey, Lifeline Farm produces cheeses that incorporate the tastes of the fields and the seasons unique to Montana's Bitterroot Valley. In contrast to the homogenized, mass-produced cheeses available in the supermarket, Lifeline's cheeses owe their character to the hay, organic barley, grass and grain eaten by their milk-producing cows. Lifeline raises 80 percent of its own organic feed on site. No synthetic pesticides, herbicides, fungicides, antibiotics, growth hormones or chemical treatments of any kind are used.
Lifeline Farm's cheeses change with the seasons. Cheeses made between the first of May and the first of June are noticeably yellower because of the dandelions consumed by the cows in these months. Once you know about the dandelion factor, whether it's the power of suggestion or not, you could swear you taste the flavor of dandelions in the cheese. Other flavors creep in throughout the year. Montana Jack is pleasingly mild with a creamy, tangy finish. - Certified Organic
