Dairy Co-op Santa Rita consists of eight family farms located at Pompeano and Selva of Serramazzoni in the Modena Apennini Mountain. All of the farmers belonging to the Co-op have been applying the methods of biological agriculture and zootechnics for the last ten years. Proper tillage, scrupulous feeding, care and wellbeing for the cattle, and the refusal of any genetically modified nourishment are basic for the daily management of the farms. The eight farms in the Co-op are located within a few kilometers of each other, so when the milk is delivered to the Co-op, it is in the very best condition.

The milk from the evening is left to rest overnight in containers, letting the cream come to the surface in a natural way. This milk is partially skimmed in the morning and then mixed with the morning's whole milk. Only milk and rennet of organic origin are mixed in large copper kettles from which, after heating and coagulation, the wheels will be made. Every day, 10 wheels of Parmigiano Reggiano are made. For a kilo of Parmigiano Reggiano to be made, 17 liters of milk will be used. The cheese is immersed in brine for 21 days, then turned, cleaned and seasoned for 24 months.

We had the good fortune to sample this cheese at the SANA in Bologna. We were bowled over by the incredible sweet, floral, fruity fragrance and the rich, pure flavor. Clearly, the additional work needed to achieve an organic product, the small scale of the co-op and the unique flavor that comes from its mountainous territory pays off to create nothing short of a masterpiece.

awesome cheese
I ate this with my own version of eggplant Parmesan in the toaster and it was great. It was also great eating raw. Towards the end I used a serrated knife like a cheese grater to deal with the hard rind part, no problem, it still was great there. I will order this one again.

You get what you get!
When ordering parmigiano cheese, you're given several choices. I selected one and had to wait because it was out of stock. Not a problem, I just put it on my wish list. I waited for two or three weeks before contacting igourmet to ask when my cheese might be back in stock. I was told they expected it the next day. It came in and I ordered it. The product I received was not what I ordered. When I asked why, I was told I got what I asked for. While the product is perfectly usable, I just really resent being treated like a dumb ass!

Fabulous cheese!
This Parmigiano is wonderful on fresh pasta. It grates beautifully and adds just the right amount of salty, mature flavor to all pasta dishes.

Delicious!!!
My husband and I have tried every good-quality Reggiano that has crossed our paths. He depends on them for his fantastic alfredo sauce; I love to snack on them because I adore rich foods. This is easily one of the best either of us has tasted! This isn't for someone used to "grocery store" parmesan cheeses - it is strong and grainy/crumbly and pungent and richly layered in flavor.

Good, but not the same....
First off, I'm very offended that someone would dare compare this cheese to Kraft. They are nowhere in the same class - Italy has been producing world-class cheese hundreds of years before Kraft came out with their horrible stuff. In this case, quality and taste far outweigh the cost of the cheese. There - I'm getting off my soapbox now :)Anyway, I digress. I did like this cheese very much and for those who prize organic products, this is a great organic cheese. There is something - I just can't identify it - that just isn't as "sugary" as the best-selling parmigiano on this[...]. I don't know how to explain it. I ate them side by side and I just prefer the "regular" parmigiano.... Sorry. I do recommend this to my friends who are very intent on buying only organic food though, and they are very happy with it.
