This certified organic pearled wheat grain comes from Italy, specifically the Mugello region of Tuscany. Farro, also known as Emmer Wheat, is the world's original grain from which all others derive, including rice, barley, wheat and rye. Because it is hard to grow, farro almost became extinct after World War II. However, it is now making a big comeback, especially in Italy where the top restaurants feature it in soups and side dishes. It has a pleasant nuttiness and a hardy texture. Naturally high in fiber, protein, and B-vitamins, it is also very low in gluten, which is good for those who are allergic. Farro grains look like brown short-grain rice, but each grain retains a firm, chewy texture even after overcooking.

Organic Perled Farro
I made a salad with cook farro and my family loved it. So fresh and delicious. I cooked the farro cooled it then added diced cucumber, black sliced olives, a can of drained rotel tomatoes with chilies, a can of drained white beans, some salt and pepper to taste, and tossed all with olive oil and balsamic vinegar. So delicious!

Healthy, wholesome hot cereal
I love hot cereal; and I've eaten several kinds. Farro (Italian for what we Americans call Spelt)is a grain that takes long cooking time, so many won't like that part. I soak mine the night I want to eat it next morning and with 3 (water) - 1 (measure of the grain)it takes at least 20-30 minutes to cook on the stove top after soaking - but the flavor is extraordinary. Better tasting than oats and crunchy, but not like grits; the grain actually "pops" in your mouth. This also makes a great soup mixed with anything you can throw in the pot (an alternative to rice or barley)

Delicious!
Easy to cook (I boiled it and then baked it in a cheesy casserole), chewy, nutty, and the leftovers didn't get mushy when re-heated.
