Since 1855, generations of the Cravero family have been overseeing the staggionatura (cheese maturing) of the highest quality D.O.P Parmigiano-Reggiano. The Cravero family maintains cheese aging facilities both in Emilia Romagna and in the now famous town of Bra, home of Slow Food, where the family business has been headquartered for centuries. Giorgio Cravero (1808-1880) as head of the family started selecting Italian cheeses in 1855. Since then the Cravero family, has handed down this tradition from father to son, maintaining the same passion for the art of curing high quality cheeses.
Giorgio Cravero's passion and skill in selecting the finest wheels from the tens of thousands produced has been learned from his father, his grandfather, and the two generations before him. With the cheeses they select the family name is literally on the line. Only after repeated deliberation, inspection, tasting and evaluation are these cheeses offered for sale. This Parmigiano Reggiano is made of raw cow's milk from the Friesian breed, which are strictly fed with local forage. The dairy uses hay most of the year to guarantee a constant level of milk quality. Made at the Caseificio Sociale San Pietro, no. 2659 in Benedello di Pavullo, situated in the Apennine hills at an altitude of 2300 feet, in the province of Modena. The cheeses are matured on site for 13 months. During this time, Giorgio Cravero selects the wheels that will be transferred to his own cheese maturing facility in the town of Bra. There the wheels will stay until they reach 24 months.
This is an exceptionally smooth Parmigiano Reggiano, leaving almost a creamy finish in the mouth. It has moist texture interspersed with the satisfying crunch of the casein crystals. It is not dry, chalky or grainy. The softer texture of the cheese helps the bright flavors explode in your mouth. Succulent, slightly sweet, with detectable notes of exotic fruit such as pineapple, along with baked bread and a grassy finish. Balanced, mild acidity shows the extreme care this cheese receives, and unlike many US imported Parmigiano-Reggianos, no bitterness mars its final flavor.
