This assortment compares and contrasts three Pecorino Toscano varieties which differ only by age. It is said that cheese has three main ingredients: milk, salt, and time. By sampling these three Pecorino Toscanos, you can taste for yourself the importance of that third ingredient. The fresh variety is aged for only 30 days, giving the cheese a mild, sweet character. The middle variety has been aged for three months; giving it more bite, but retaining some creaminess and innocence. The most aged variety is called Oro Antico Reserva, which has been aged for six months. This may not seem like a long time, but for a small cheese like Pecorino Toscano (its wheels are only five pounds each), the aging process moves quickly. Oro Antico is firm- textured and quite sharp and complex, especially when compared to its younger siblings.

All items are made from 100% sheep's milk. Assortment includes 3 half-pound wedges of Pecorino Toscano.

    you can't get this at your local market!
    After traveling to Italy multiple times & visiting the cheese shops in Pienza and throughout Tuscany, these cheeses are a great way of reliving our wonderful memories and tastes of the region.

    Good Sampler
    Though I don't travel to Tuscany frequently, I am a huge fan of Pecorino cheese, and received this sampler as a gift from a good friend. My personal favorite was the fresh Toscano, which a had a silky texture and nice hint of lemon. My husband preferred the aged one, which he likes to shave over pasta - for me it was more like an aged gouda. The medium one was very versatile in salads and sandwiches. Overall a nice sampler and introduction.

    Not good examples of Pecorino Toscano
    The Oro Antico Reservo was pretty good; however, the other two varieties were bland and tasteless. I travel to Tuscany often and have sampled many varieties (different villages) of the Tuscan sheep cheese. Two of the three varieties that I received from you were not good, tasted bland and like plastic. It is not because they were not aged. My favorite Tuscan sheep cheese comes from a village in the mountains outside of Florence called Baggio. The sheep cheese is not aged at all and is the best I've ever had.
