Perlagrigia with Truffles
Italians have enjoyed this exciting artisan cheese for decades, but it has only recently been discovered by American connoisseurs. Made just outside of Venice, this cow's milk cheese is aged for just one month. A young, fresh tasting cheese, Perlagrigia contains flakes of the prized black truffle. After being carefully washed, it is rubbed with extra virgin olive oil infused with natural truffle flavor. The Italian phrase "Sotto Cenere" means "under ash," indicating that this semi-soft cheese is covered in ash to preserve its flavors. If you like our Boschetto al Tartufo, you will have to try Perlagrigia. Enjoy it with your most special dishes and to "wow" your guests at your next party.
Made from pasteurized cow's milk.

Delicious!
Such a great creamy cheese with just enough truffle taste- not overpowering. My whole family loves it. Don't like the ashes, but that's part of it.

Very mild, semi-soft. Good!
This was very good cheese. I had never had anything with truffles in it before and was surprised at how mild the flavor was. The cinder on outside of cheese was a bit of a surprise!

Wow! Excellent!
I was very impressed with this cheese, the aroma is exquisite and the taste is unbelievable. My favorite thus far. I can't believe they've sold out, I just hope the wait ins't too long. I love this cheese.

Too much waste
Trying to separate the ash from the white cheese throws ash everywhere. Cheese itself is delicious, but grey ash is not pleasing to see
