Similar to Brillat Savarin but from farther south in France (the Champagne region), this triple-crème owes its name to two friends who created it back in the 1970's. The more famous of the two, Robert Rouzaire, founded the Rouzaire cheese manufacturing company. According to Pierre and Robert's story, impatience played a major role in the developmnent of this fresh cheese. Tired of waiting for the cheese to fully ripen, they consumed a wheel of it early in the cheese-making process, when the cheese was quite soft and still spreadable on the inside. They loved it and went on to perfect the recipe, adding crème fraiche before curing for extra creaminess. With a rich, buttery texture and a tangy aftertaste, this is one cheese you will definitely want to include on the cheese board.

A FAVORITE
A staple at my house. Always delicious. Held back on top rating because on rare occasions it is not quite as creamy as usual.

Wonderful cheese, BUT...
As another reviewer pointed out, this can be a gamble. This is a truly great cheese when it's received in good condition, which it did two years running. However, the last order from iGourmet arrived completely ammoniated. "Overripe," indeed. 3/4 of it went into the trash. Truly unacceptable at this price point, since I can always get poorly kept triple cremes across the street. (Also, would be curious as to a seeming discrepancy between the iGourmet desciption and the one posted by fromagier Rouzaire itself as to the maturing process.)

Always Great
Regardless of the stage of ripeness, this remains my favorite cheese. Looses nothing in flavor if frozen when I cannot finish it within two weeks. Creamy, tasty, and no unpleasant aroma

Great cheese every time
A long time favorite that has come to me in various stages of ripeness. Always a treat at every stage. Have discovered that it looses nothing by freezing if I cannot finish a wheel within a week.

Abnsolute Favorite
Must have this on hand at qall times. Always creamy and delicious, does not deteriorate quickly and surprise, after experimenting I discovered it can be frozen with no bad effects in case it cannot be finished in 10 days.
