Some refer to Provolone as Italy's national cheese. It was originally produced in Campania in the southern part of the country. Curiously Provolone production is now centered in the north in the Piedmont and Lombardy. Like mozzarella, Provolone is a pasta filata cheese, meaning that it is produced by stretching fresh curds into a taffy-like consistency. In the case of mozzarella, the cheese is sold and served fresh. For Provolone, the stretched curd is molded into a pear or torpedo shape, then tied with rope and hung in an aging cave for 3 to 12 months.

Perhaps the most famous Provolone producer is Auricchio, a family business that dates back to 1877. Recently Auricchio opened a plant in the US to satisy the excessive demand for their Provolone for the American market. My favorite provolone
Can't be beat. Best with any hard salami and some sweet roasted peppers at room temperature. Yum Oh!

There is provolone and then there is PROVOLNE!
None better. Just the right amount of sharpness. It has a moderately firm texture that slices easily with a knife when it is at room temperature.

I would recommend this!

Great Cheese but shipping charges are high
The cheese is excellent but unfortunatly I ship it to a family member in Puerto Rico and the shipping charges are high in my opinion.

Great service
The one I sent the gift to said it was boxed lovely. They have not let me know if contents were tasty, but I'm sure they were , they love that kind of cheese. Thank you for such fast service. If I could change things, we could include a wine sent with our gift basket.

Provolone Piccante/Auricchio
This is the provolone piccante to fall in love with. Savory, salty with just the correct amount of bite that I recall from my childhood when I made provolone piccante and onion and homemade bread sandwiches for snacks.

Photo misleading but good cheese
As others have said I expected the ball. I can not tell by the photo the weight. When I talked to their customer service they said it’s a 20 pound ball. So they should change their ad this was my first purchase from this company. I am a little apprehensive to make another.

Oh wow!
I got this for my boyfriend who begged me to get him provolone since he liked it so much. Once he tried it he said, "I like the American kind better." But forget him, this cheese is AWESOME! There is nothing bland about it. It's beautifully white and shaves so easily onto meat, sandwiches, pastas, anything! It stays intact and doesn't crumble if you handle the shaved slices, which is great. The taste is powerful but still distinctively that provolone we all know and love. I'm not sure why people think you get the whole ball...perhaps because provolone normally comes in circular slices. This cheese makes you think outside the normal provolone box, so to speak. Forget what you know about provolone and try this. I highly recommend throwing some in a baked pasta dish and paired with a strong red wine.

excellent cheese however photo shows cheese in its casing and it is sold in slices..this a bit misleading..another supplier shows it as is and it arrives that way
