A major group of Hispanic cheeses are melting cheeses. These Hispanic cheeses melt without separating into solids and oil. Hispanic melting cheeses are generally mild tasting and smooth textured. They are often eaten as a snack right out of the package. Usually, as their name suggests, they are melted in hot dishes. Hispanic melting cheeses, unlike common U.S. cheeses such as cheddar, do not separate into oil and solids when they are heated. Consequently, they make dishes like pizza, grilled cheese sandwiches, and cheese burgers "cheesier" and less greasy. Of course, they are invaluable in preparing Mexican dishes such as quesadillas and tacos.

Use of Hispanic melting cheeses like Queso Quesadilla or Asadero in popular dishes like quesadillas or nachos greatly increases the finished dishes' appeal. Not What I Expected
I thought I was ordering a meltable cheese, suitable for making creamy queso dips. I tried every thing from shaving, cubing and shredding the cheese to get it to melt properly. No such luck. The cheese behaved the same way that Queso Blanco, a readily available Mexican cheese also refuses to melt. On a positive note, the eco-friendly shipping container is a nice value added feature.

Hard to find everywhere else!
This cheese is harder to find than hen's teeth. This cheese is mild, good for melting over Mexican dishes b/c it doesn't fight with the assertive seasonings already within the food itself. After melting, it remains soft and creamy longer than other cheeses that tend to 'set' at room temperature (mozzerella for ex.). A must-have cheese for your Mexican dishes.

Harder to find than the Holy Grail
I almost fell off my chair when I saw that this was available anywhere in the world. Living on LI, I have access to many markets and cuisines, but this cheese, as another has stated, is very elusive. I used it over refried beans. I am actually dieting now, but I weighed out and shredded 3 ozs for two of us. In a small frying pan I heated up canned NO-fat (Goya) refried beans (also very good). Once heated thru, I sprinkled the cheese on top, put a lid on pan, and in just a few minutes, the cheese was adequately melted from the residual heat. (This is how it is served in a Mexican restaurant near me). It is very stringy and stretches like the best mozzerella but it is much more tender than mozzerella. Flavor is very mild, a blank canvas, not salty, so I would salt the food underneath it if need be. Mexican food is assertive, so it's nice that this cheese is not. This cheese is all about the texture and the way it melts! I hope IGourmet will always have it available.

aka Queso Chihuahua........YES!!!!
I was raised eating Queso Chihuahua in the Chicago area. Did not find it in PA or NY when I lived there. Now I'm in TX and it was hard to find but I did find it at Central Market in the DFW area. It's a little expensive though because they sell it in small chunks. But now I found it here at [@] and it seems like a great price. It's the best cheese for quesadillas, enchiladas, refried beans, etc. I HIGHLY recommend this cheese. It doesn't get hard after having melted. I also recommend El Milagro Tortillas to use with it. They don't get hard right away after heating like most others do.

Finally, Chihuahua cheese!
I have been looking for Chihuahua cheese ever since I lived there. I have scoured local grocery stores and tiendas for the cheese, it was never there. I have since found it here under the name Queso Quesadilla. It's amazing, beats any cheese used for a quesadilla in any restaurant and I now am able to make authentic queso fundido con chorizo.
