Rauchkäse is a smoked cheese typical of Bavaria. This specialty was originally produced by Trappist Monks in the abbey of Rotthalmunster. Today, there are many versions of Rauchkase being produced in Bavaria. The most well known version is Bruder Basil. Like Bruder Basil, Rauchkase is also smoked over select beechwood embers. But, Rauchkase is a more artisanal cheese with more body and texture in comparison to the smoothness of Bruder Basil. The rich, buttery Bavarian cow's milk complements the smoking, creating a robust, smoky aroma with a delicate smoky flavor.
You can cook with Rauchkase, but we recommend doing as the Bavarians do; just cut slices and eat with your favorite breads, cold cuts, and raw veggies. If you are not having it for breakfast, then don't forget the beer!

Very good cheese
I bought this as a x'mas gift for my hubby & he likes it so much that I placed another order...My kids like it too...Everynight my husband been munching on it w/out any cracker...Unfortunately, he doesn't like the blue cheese he's not a fan so i just probably give it to my friend who likes blue cheese...

OK but not as good as Bruder Basil
The cheese itself was very good but the rind that was supposed to be edible was a little too hard and bitter for my tastes. I prefer something like Bruder Basil where both the cheese and the smoky rind are tasty.Fritz and Deirdre liked the rind but Dalmatians aren't as finicky I suppose.

Delicious
I am not a fan of smoked products, but I liked this cheese. The smoke flavor is not too pronounced. The cheese is easy to eat with a pleasant flavor, but not a complex "great" cheese, more like a daily drinking wine than a special occasion wine. It is certainly an excellently priced cheese, too.

Rich Flavor
I tried this for the first time and loved it. Rich flavor with nice smokey taste to it. So good I ate it "as is."

Great...But not the Rind
A good snacking cheese...also good melted on top of a baked potato. Rind detracted from a five-star rating...not very tasty and difficult to remove.
