Haystack Mountain Dairy, a goat farm and creamery located on seven acres of the rich agricultural plain that skirts the foothills of the Rocky Mountains northeast of Boulder is a farmstead dairy comprised of dedicated people and a healthy herd of Nubian, Saanen, Alpine, Oberhasli and LaMancha goats. The mix of milk from all of these goats produces delicious cheeses.
Haystack was recently honored as one of 24 U.S. dairies invited to send cheese to the third "Feast of Cheeses" in Bra, Italy. The festival was sponsored by Slow Food International, an organization founded by Italian writer Carlo Petrini as an antidote to the industrialization of food production by fast-food outlets.
Red Cloud's eight-ounce wheel has a smooth, reddish, soft washed-rind. Made with raw goat's milk at their farm, it is aged for 60 days to develop its powerful balanced and complex flavor.
