Auvergne is a mountainous region in the center of France that consists of rugged mountain ranges cut by four great rivers: the Loire, the Cher, the Dordogne, and the Lot. The area is known for its skiing, but also for its amazing production of cheeses, fruits, and vegetables. One of these fine cheeses is Saint Nectaire, which comes from a small town near the breath-taking ski capital of MontDore. Saint Nectaire is an ancient, natural-rinded, soft-textured monastery cheese with a mild and fruity flavor. Its smooth, buttery texture and pungent aroma are characteristic of many good French cheeses.

Produced at altitudes exceeding 1,000 meters, where the air and water are clean and pure, Saint Nectaire cheese is still made using traditional methods. Its milk is taken from cows that graze outside on mountain grasses peppered with wild flowers. After its initial production, each wheel is placed on a handmade straw mat, then aged in an underground cellar for at least two months.

least favorite
My husband and I liked this the least of the six cheeses we tried. It has a softer texture and a bit of an aftertaste.

Interesting..
Normally I love the soft cheeses from this region, but this one not so much. Tried it with pears, grapes and apples and a sauvignon blanc and a pouilly fuissé. Perhaps it would work well with viognier but I don't care for that wine. It certainly works well on a fruit and cheese selection, just like others much more

Saint Nectaire Luscious and Moist
This is a wonderful cheese, soft, and was delicious with apple slices. Mild, nutty, fruity. Will buy again.

A mediocre Saint-Nectaire
In my recent purchase, while the Dutch cheeses (old Amsterdamer and Old Gouda) were outstanding, and other cheeses were fine, the Saint-Nectaire was disappointing, tasteless.

Everytime I place a cheese order with IGourmet I order St. Nectaire
Aroma is pungent but not overwelming. Best with a quality French Baguette. One of my favorite french Cheeses.

Wonderful!
While not as good as the Saint-Nectaire one can find in France (it's ultra-pasteurized before export), this is still above and beyond anything one can find in the states. It loses some of its texture and complex flavor due to ultra-pasteurization, but not enough to make this snob stop gobbling it up like manna from heaven. Just splendid.
