This cheese has a slightly misleading name as it has nothing to do with the county of Shropshire. In fact, it originated in Scotland in the 1920s before its production was transferred to Leicestershire. Shropshire Blue came about from a man named Dennis Biggins, who actually made his living grading another famously orange cheese, Cheshire.

Made in a similar way to Stilton, it is a soft cheese with a sharp, strong flavor that takes between six to eight weeks to mature. Orange in color with blue veining, it enjoys a slightly tangy aroma.

Indescribable
This is my favorite cheese. For a summer dinner, a hunk of Shropshire Blue, some sliced fruit, a few crackers....perfect. Very distinctive sharp flavor, different than any of the other blues I've tried. Just a perfect balance of taste and texture.

Not up to usual standard
Usually one of my favorite cheeses, but this one did not have the expected rich flavor, it seemed a little dry and salty.

One of my two favorites
If you like blue cheeses, you will love this one. Combines the best of blue and cheddar cheeses. Sharp, sweet, creamy - great with a sweet red wine or any fresh fruit or berries.
