Pearl sugar is granulated white sugar that has been processed into small, round grains that have been polished to a pearl-like sheen. Typically, pearl sugar is used in Scandinavia (and elsewhere) to decorate cookies, cakes, cinnamon rolls and much more.

Pearl Sugar is used to make the popular Belgian sugar waffles. Added to the dough, this imported sugar caramelizes when baking to create crunchy pockets of sweetness. Or, try adding some color to your baked goods by shaking the pearl sugar in a plastic bag with a few drops of food coloring. Either way you'll satisfy that sweet tooth!

Slightly Dissappointed
I tried using the pearl sugar yesterday to make Leige Waffles and was dissappointed that the sugar did not melt as the dough was in the iron--thus producing the desired crystalizaton on the surface of the waffles; rather, it kept its form (extremely similar to kosher salt). My waffles ended up looking like waffles with kosher salt in them. Additionally, the sugar was not as sweet as I would think it would be...

The Best Pearl Sugar!
You can find decorative sugar made in the States. I like to buy American whenever possible; but Swedish PÄRLSOCKER is made of sugar alone, while the stuff I bought to replace it has an added ingredient--carnauba wax--to make it glisten. I bake every Saturday: decorative sugar is a necessity. This the best.

Nice touch
I used it on pretzel cookies. Gives the look of salt, very cute! Can also be colored very easily.

Swedish Pearl Sugar
What can I say, beautiful small pearls of sugar, just the right size to caramelize perfectly into crunchy little pockets of sugary goodness in my Belgian waffles. I assume the product is pure cane sugar but I only read/speak English and none of the languages on the box were English.

Great product[...]
I am planning to use the pearl sugar to make my version of Belgian street waffles. I had a devil of a time finding it, and was very happy to find it at igourmet. I just wish I could buy it in larger quantities, just in case my attempts are successful. I can see many other uses for this type of sugar in holiday baking, etc.
