Aged for six months in temperature and humidity controlled maturation rooms, the cheese develops a semi-firm, smooth and slightly crumbly texture while maintaining its creamy, mellow yet somewhat piquant taste with earthy undertones. Lenberg Farms Classic Reserve's sheep herd is the newest addition to the Lenberg Farms’ family of animals added in January of 2011. They started raising British milking sheep and are now making wonderful aged sheep milk cheese. Tania sheep milk cheese was a winner at the 2012 American Cheese Society.
