Tasso Ham is a Cajun specialty - a lean piece of cured pork (usually shoulder) richly seasoned with red pepper, garlic, file powder and several other herbs and spices, and then smoked for two days. The result is a firm, smoky and flavorful meat largely used for seasoning. It is most often finely chopped and used to flavor foods such as beans, eggs, and pastas. Makes a great addition to Jambalaya; adds flavor to collard greens; or use in white tarbais bean ragout.
  • Please note that weight of ham ranges slightly. The average weight is 1 lb.

awesome!
This is the second time ordering this ham and again not disappointed one bit. I make tasso ham and crawfish in a cream sauce just like the one served at the Gumbo Shop in New Orleans. This ham is a must for making the dish perfect. Thank you I gourmet.com for continuing to carry this product.

Ham with a
I love to use this ham in a cheesy, potatoey, casserole I make for some holidays. Always gets rave reviews and usually no leftovers...

Wonderful!
I cannot find Tasso in Idaho. I've substituted in recipes for years, but it's not the same. I found reasonably priced, Tasso on Igourmet and tried it. Fantastic! Wonderful product, excellent quality and flavor. I will buy from them again when I run out of this one.

Will order this again!
Tender and delicious! I have made shrimp and grits several times, but it was always missing that special "something." I decided to see if Tasso ham would really make the difference, and boy, did it ever! A little goes a long way, so the one pound ham will make four or five dishes - I can't wait to try it in other recipes.

Got to order again!!!
I had seen on TV for years and decided to try. It had great smoke flavor and the kick of the pepper in the coating gave it a really great taste. I used the last this morning in an egg omlette with green onion and cheese and was great.

Cannot find this ham locally
I use this ham in a "potato" casserole I make for Christmas brunch. It gives it just the best "zing"...

Excellent ingredient for Shrimp and Grit
This is the perfect mix of spices for good old Shrimp and Grits. Delicious!

Wonderful ham
This ham is fabulous. I missed tasso when a local New Orleans cuisine restaurant went out of business. I used this in a recipe with spinach and pasta in a cream sauce. Wow. I can't wait to use the remainder of the tasso in a quiche. I can't say enough about this ham. It is not overly hot and spicy - just right, to my taste.

Great taste!
A great ingredient to add to any Creole or Cajun dish to add a lot of spice and heat.

So hot I cried
This is essential in Cajun cooking, but you should know that it is so hot it's not edible on its own. It is used only as a flavoring. I love/crave spicy food but this is so hot I can't handle more than two small bites.
