Since the Dairygold Co-operative Society came into existence in 1919, the cheddar cheeses of Mitchelstown (Baile Mhistéala in Irish) in County Tipperary, have been the most popular choice in Irish homes. As the trusted market leader of Irish cheese, Mitchelstown has always been eager to embrace innovation, and in 1932, it was the first dairy company ever to open a modern cheese plant. Central to the success of making full-flavored cheeses is, of course, having a regular supply of its most important raw material: the finest Irish milk. The land of Tipperary is renowned for its dairy produce due to the many green pastures, clear waters, and the mild climate it enjoys. As a result, Tipperary Cheddar, aged over twelve months, has a rich, creamy texture and a delicious, sharp taste.

Sharp as A Poet's Tongue
A step up from what Mitchelstown used to produce, but then all the Irish cheeses have either improved or disappeared. This example is superior to Blarney but seems inferior to the best of the US Cabot cheddars. Not a cheese I would consume with Jacob's cream crackers, but excellent grilled over sliced tomato on an English muffin.

Best I've had so far but still too bland

Tipperary Cheddar - Would recommend....
Very impressive cheese. Pairs well with wine.....and probably beer too. Nice buttery sharpness without being tart.

Delicious! Very Good! Recommend!
Just polished off remnant for better taste-test; served along w/half dozen Irish cheeses & lots of Guinness/beer variety at 'celebrate Ireland' party week ago. Great cheddar. P.S. Equal/better is igourmet customer service via web/phone & delivery well packed/chilled & received approximately 30 hours prior party. Perfect! (several cheeses ordered; remainder not tasted yet)

The BEST cheddar cheese you'll ever eat!
We first started purchasing this cheese at [...]and loved it. We have introduced it to all our family and friends. We eat it primarily with artichokes, crackers, hearts of palm and for snacking at any time. Sometimes we substitute it as above for a meal. My biggest con is that I cannot purchase it locally anymore and have to order it. The price and time concern me.

Very flavorful
An excellent all-around cheddar with a strong, sharp flavor. Great all by itself, with apple slices, crackers or melted on a sandwich.
