Västerbotten is the traditional Swedish celebration cheese. To many Swedes, it is considered the "emperor of cheeses," either because of its heft (it is made in 40 pound wheels) or its full flavor. Produced in Northern Sweden, Vasterbotten is aged for over 11 months and thus is dry, reminiscent of a young Parmigiano Reggiano or an aged Cheddar. Its flavor is rich and full-bodied with a tangy, bittersweet bite. Serve it in the Swedish tradition with some ginger snaps and a cup of hot glogg.

Good authentic taste
The taste is excellent, texture is good but a slight bit flakier than it could be. I love it sliced very thin and served on pepperkakor, or on crispbread with coffee. It only gets 4 stars though, because the cut I received had a lot of moisture on it. Perhaps because it was shrink wrapped for too long.

Veterbotten
The cheese was excellent in taste. Just as it should be in texture and overall just what I expected. My only minor gripe would be the cut of my particular piece was rather asymmetrical and odd. No big deal just problematic to use a cheese slicer on. The cheese itself was wonderful.

No Christmas without Västerbotten cheese. It has a very strong flavor and is perfect on crisp bread together with pickled herring.

Definitely a 5 Star Cheese
I think Vasterbotten is fabulous. It's a Swedish staple! I only wish I had the slicer that makes slivers across the top rather than having to use a knive to cut off chunks or thicker slices as this cheese really tastes best eaten traditionally (when the slices are nearly see thru). Igourmet delivered promptly and even sent me an enotification that this product had come back into stock, as it was "sold out" when I was originally shopping for it 2 or 3 weeks prior. A great job!

Vasterbotten, little salty, little crumbly all good!
This Vasterbotten Swedish Cheese does taste a bit like a young Parmigiano Reggiano like its description says. And I have tried it on pasta and just alone with a Granny Smith apple and I'm now going to try with ginger snaps and a cup of hot glogg just like the above description says because this is a great tasting sharp cheese. Thank you Sweden and thank you too igourmet.

Great Cheese
Hard to find traditional Swedish sharp style cheddar cheese, without which the Swedish Christmas celebration is incomplete.
