Upping my rating to five stars
We keep ordering this cheese which, as I mentioned won the title of "World's Best Cheese" I have since learned that in the cheese "granules" or "crystals" are tyrosine, an amino acid. Tyrosine clusters are signs of a well-aged cheese. This is the best tasting low fat cheese anywhere. You can view a Wine Spectator rating of low fat cheeses 3 of which, I believe, are sold on igourmet. This Vermeer was rated world's best cheese

There are, however, some slightly crunchy granules which may have something to do with how the cheese is kept. A Note from igourmet: These "granules" or "crystals" are tyrosine, an amino acid. Tyrosine clusters are signs of a well-aged cheese. This natural process is one of the reasons why we love the texture of cheeses such as aged goudas and granas!

Aged, a good cheese
Flavorful, rich, has a bit of cheddar taste to it. Would have never guessed it is less fat less salt. Call it a 4.5
