In 2009, a community came together save an 18-acre dairy farm in South Woodstock, Vermont. In very short order, the dairy farm has been transformed into the Vermont Farmstead Cheese Company, an award-winning organization that is creating an entirely new generation of unique farmstead and artisanal cheeses. Starting with their own Vermont artisan cheddar, Vermont Farmstead makes a tipsy version by adding two kinds of brew from Harpoon Brewery. Blending Harpoon's Munich Dark and IPA, they soak the curds during the cheesemaking process for a full ale flavor. The dairy's imported peg mill tears the curds, giving them more surface area to really soak up the flavor of the beer. Vermont Farmstead AleHouse Cheddar leads with a fragrant nose, follows with a flavorful balance of cheddar and nuts and ends with a strong hop finish. Of course, this unique creation makes a great pairing partner for any brew.
