Joe Widmer's family has been crafting cheese in Theresa, Wisconsin since his grandfather John Widmer arrived from Switzerland and settled in the heart of one of the richest cheesemaking areas in America more than 80 years ago. Much like a limited edition book or lithograph, every piece of Widmer cheese is handcrafted in small batches to ensure quality. Joe just became one of only eight certified Wisconsin Master Cheesemakers in America. Their reserve cheddars are marked, labeled with a vat number and production date, then placed in special curing rooms to age. While curing, the cheeses are inspected and turned by hand at regular intervals. This six year aged cheddar is rich with notes of caramel. While it is aged for a considerable period of time, it is still moist and creamy on the tongue with a noteworthy tanginess and slightly salty finish.

Awarded 1st Place in the American Cheese Society 2007 Awards in the Mature Cheddar: Aged Over 49 Months category.

Best Aged Cheddar Ever !!!
Just the right amount of Sharpness.We love to just snack on it.This cheddar is always consistenty,dry and crubbles nice.

WOW What a Cheese
What a surprising cheese. Has a very deep and rich cheddar flavor. Best cheddar I've ever tasted. One of the best cheeses I've ever tasted.

Lasting flavor!

Very Nice
A very good cheddar -- makes an excellent grilled sandwich, by itself or with tuna or meat. Also wonderful to eat with crackers.

Winning Widmer's Reserve
This is the second time that I have ordered this fabulous cheese, the first time being in the "American Cheddar Collection". After sampling it then, I had to order it again! It has a sharp bite to it which is what I love. This cheese will be on my re-order list from igourmet consistently!

Outstanding!
Sharp and buttery without being flaky like some aged cheddars tend to get. This was the favorite at a recent cheddar tasting I hosted.

Thats some type of cheese Larry!
Very sharp and tasty. Is's so old that it's starting to chrystalize. Is that a good thing? I don't know, but it sure tast good.
