Aux Délices des Bois brand stands for specialty, natural foods. Its award-winning butters, bacon, and salumi are innovators in the gourmet segments. Led by industry veterans Thierry Farges, Francois Baumont and Charles Ventre, between the three of them they have spent a combined 75 years honing their talents in the specialty food industry. The partners bring a French sensibility to their 100% American products.
Thierry Farges founded Aux Délices des Bois in Tribeca (lower Manhattan), after making his mark in the truffle and wild mushroom importing business. He collaborated on a definitive mushroom cookbook authored by his wife Amy Farges: The Mushroom Lover's Mushroom Cookbook and Primer (Workman 2000).
François Baumont started his career as a general manager for a major pate and sausage producer. His expertise in the areas of food safety and quality control ensure that the Aux Delices des Bois brand will maintain its premium position.
Charles Ventre, the mastermind behind Aux Delices' charcuterie line, has been a hands-on salami maker since age 9. Charles believes in long-curing for maximum flavor, treating his livestock humanely, using only natural casings and string; and including no artificial additives in his creations.
